La Perla makes their own fresh mozzarella, to the tune of 40-pound batches nearly every day—such is the popularity of their Insalata Caprese and pizza Margherita. La Perla is one of only two pizzerias in Oregon and a select few around the nation who make pizza authentic enough to be certified Napoletana-style by the Associazione Verace Pizza Napoletana. In keeping with tradition, the pizzas are made with authentic Italian ingredients, formed by hand, and baked for 60-90 seconds in an oak, wood-stoked oven.
